Preheat oven to 400F. Grease 9 inch pie pan.
Roll out half of the pastry and fit it into the pie pan. Brush with melted jam and refrigerate.
Peel, core and cut apples into 1/4" slices. Place in a bowl and toss with lemon juice.
Combine the brown sugar, GF flour, cinnamon and nutmeg. Layer 1/2 apples in chilled crust and sprinkle with 1/2 sugar mixture. Repeat layers. Cut butter into small pieces and scatter over apples.
Roll out top crust, place over filling, trim and flute edges. Make 3 steam vents in center.
Brush with milk and sprinkle with 1tsp sugar
Bake in middle of ovenfor 50-60 minutes. If crust edges brown to quickly, cover with strips of foil. Allow to coof for at least 10 minutes before serving.
