combine pears, cheese, onions and nutmeg. set aside.
in a small bowl, beat together eggs and water until blended. in a 7-10" omelet pan, heat butter over medium heat until just hot enough to sizzle a drop of water.
pour in egg mixture. mixture should set immediately at edges. with an inverted spatula, carefully push cooked portions of egg mixture at edges toward center so uncooked portions can reach hot pan surface. when top is thickened and no visible liquid egg remains, fill with pear mixture. with a spatula, fold omelet in half and serve
