Fresh or frozen potatoes. Mix some chopped onion and bell peppers into the potatoes before cooking.
Heat a non stick skillet over medium-high heat for 30 seconds. Add all the potatoes to the dry pan, flattening them slightly with the back of a spatula or a fork. Cover the pan with a lid and cook until they begin to brown, 5-8 minutes. Use a spatula to turn the potatoes in one large round or break into pieces while flipping. Cook the potatoes until they are heated through and evenly browned, 7 to 10 minutes, turning as often as you wish.
Serve immediately with ketchup, fresh salsa or bbq sauce.
