Suggest a better descriptionPut potatoes into a medium saucepan. Add 4 cups water and some salt and bring to boil. Simmer, partially covered, until almost tender. Drain and pat dry.
Heat skillet. Add oil and 1 tablespoon butter. When foam subsides, add potatoes and cook over high heat until lightly golden. Season with salt and pepper and roughly mash potatoes with a spatula. Dot remainting butter over potatoes. Cover and cook until crisp on botton, about 3 minutes. Slide the potatoes onto plate and invert them back into the pan. Cook until nice and crusty and serve.
