These are a crowd pleaser during the holidays. Great for family to grab and heat up next day too.
Makes 12 standard size muffins.
Preheat oven to 350 degF. Grease a 12 cup muffin tin.
Thaw the hashbrowns by either pan frying or microwaving. You want to remove some of the water from the potatoes otherwise cook time is 10 to 15 minutes longer.
In a medium mixing bowl whisk together eggs, sour cream, garlic salt, pepper and paprika.
Fold in the hash browns, melted butter, green onion, crumbled bacon, parmesan and 1/2 the cheddar.
Divide the mixture evenly into the muffin tins.
Cover with the remaining cheddar.
Bake uncovered for 25 minutes.
Let rest 5 minutes before serving.
Make these ahead for a quick weekday breakfasts.
If using precooked bacon bits use 8 heaping tablespoons of bacon bits.
