Refresh potatoes (if using boxed version) by adding hot water (minimum 120 degrees F). Let stand for 10 minutes.
Butter a 9 inch pie pan.
Heat the canola oil in a non-stick pan over medium high heat. Drain potatoes and cook on one side until brown at the edges, about 5 minutes.
Press the potatoes lightly into the pie pan to make a crust.
Arrange the bacon, onions and cheese over the crust.
Beat together the eggs, milk, cream, salt and pepper; Pour over all.
Bake for 25 minutes or until set.
