1. Preheat oven to 350 deg. Spray square baker with vegetable oil. Combine eggs, milk, salt and black pepper.
2. Chop bell pepper. In small Micro-Cooker, microwave butter, red bell pepper and onion on high for 1 min. Fold vegetables, 1/2 of sausage, 1 cup cheese and hashbrowns into egg mixture. Pour egg mixture into baker. Press remaining sausage slices vertically, around edge of casserole, pressing down gently. Sprinkle with remaining cheese.
3. Bake 30-35 minutes or until eggs are set.
