These are spectacular! There's plenty of cheese sauce left over. It's great on everything: BBQ burgers, pasta, mashed potatoes, etc.
Cut the top off of a head of garlic. Place on foil and drizzle with oil an sprinkle with salt & pepper. Wrap in foil and bake at 400F for 40 minutes. Let cool and squeeze the cloves out of the head. Chop finely.
Wash potatoes and slice very thinly with a sharp knife. Do not cut the potatoes all the way through the bottom. Place in a medium baking dish and brush with oil. Sprinkle fresh rosemary, fresh thyme, salt & pepper. Bake at 400F for 60 minutes.
In small pot, melt butter until bubbly. Add flour and cook until browned (2 minutes). Pour in milk and whisk until thick. Reduce heat to a simmer and add cheese, garlic, paprika, salt & pepper. Keep warm until potatoes are finished.
Drizzle on top of potatoes and serve immediately.
