1. Mix ingredients (except chicken) in food processor and mix fine. Set aside about 1/4 of the mixture.
2. Rub 3/4 of the mixture on the chicken (put some under skin) and let marinade for 30 minutes up to a couple of hours. Don't leave for too long because the rub is very acidic.
- Preheat to 400 degrees. Place chicken skin up on roasting pan. Place on the lowest rack and cook for 1 hour, or until chicken reaches 165 degrees internal temp. Continue to baste with set aside marinade. To crisp the skin at the end, place on higher rack and turn oven to broil. Brush with a little butter for a real golden brown before broiling.
- Preheat grill to 400 degrees. Place chicken on grill skin side up. Cook for 1 hour, or until chicken reaches 165 degrees internal temp. Continue to baste with set aside marinade. To crisp skin at the end, place it on direct heat skin side down until desired crispness.
Serve with some sticky rice and napkins!
