1. Add coconut milk and sugar to rice.
TERIYAKI SAUCE
2. Add all the sauce ingredients to a small saucepan over medium heat. Bring to a boil, stirring constantly, and boil for a minute. The sauce should be thick enough to coat the back of the spoon.
3. Pour 1/4 cup of the teriyaki sauce over the raw chicken and set aside to marinate for at least 15 minutes.
1. Cook chicken in medium sauce pan. Add in vegetables and pineapple, drizzle olive oil and cook until tender.
Serve over rice.
