Saute ham and green pepper in butter until lightly browned. Combine liquid, vinegar, brown sugar, mustard, 1/2 teaspoon salt, pepper, and cornstarch, mixing well. Add to ham; cook and stir until sauce is thickened and transparent. Add pineapple. Combine water, q/w teaspoon salt, pepper, scallions or chives, and Minute Rice. Pour into the center of sauce. Bring to a boil, cover and simmer for 5 minutes or until rice is soft. Makes 4 servings.
