Something like a vegetarian taco salad only better! It's sort of idiot-proof...no measurements...just build the salad the way you like. There's lots of room for adding your own ideas. An economical favorite Friday night meal for a crowd. A wonderful recipe from my sister-in-law, Kaylene Walz.
Heat the beans in a pot. With a potato masher, mash the beans so they resemble re-fried beans. Meanwhile, cook rice according to package directions. Place each of the other ingredients in separate bowls. You're done!
The best way to serve this is buffet style. Grab a plate and make your way through each item. Start with chips then layer beans, rice, cheese, lettuce, tomatoes, and so on...
It's easy to wind up with a huge plate at the end so start small. My son tops it all off with ketchup! He figures it's just adding more tomato with a sweet flavor.
