Suggest a better descriptionHeat oil, veggieterning, garlic and ginger paste in saucepan on high'ish (9 in Higluns Hus)
Once 'melted', svits pumkpin & boniato chunks in the spice mix
When pumpkims and boniatos are svits'ed, add 2 x coconut milk
Turn heat down (5 in Higluns Hus), and let simmer for about 20-30 mins
When pumpkins are soft, blitz them with the stavblender
Halve soup portion into a separate container
Add sliced red peppers, peas and taquitos into remaining soup
Leave to simmer for another 5 minutes, or until red peppers are soft
REMEMBER to add a little nutmeg to the soup and serve with Mercadona weinerbrød
Serves two portions each.
