Healthy tacos made in slow cooker
Put olive oil in bottom of slow cooker, put shredded cabbage on bottom use at least half the package, layer chicken thighs over the cabbage. Cook on high for 3 hours, or low for 6 hours. (Turn the slow cooker on later in the day; otherwise the chicken dries out)
Prep the onions and tomatoes (but don’t cook them. - add them afterwards.
