Looking for a healthier version of a French Silk pie and came up with this wonderful alternative.
1) prepare the pie crust as directed (~10min baking at 450deg, if using pre-made Pilsbury crust)
2) while crust is cooling (~30min), in a mixer, put stick of butter, softened and sliced up. mix on medium until butter is whipped.
3) add sliced banana to whipped butter until well mixed.
4) slowly add sugars until fully mixed in.
5) melt chocolate in a bowl (in microwave or on stove). Add slowly to mixer until fully mixed in.
6) add eggs, one egg at a time, until fully mixed.
7) add mixture to cooled pie crust and refrigerate at least 2hrs before serving.
optionally add chocolate shavings or whipped cream before serving. Enjoy!
Note: Could possibly add less sugar (3/4 cup total vs. 1cup). The banana adds enough sweet to make up the difference.
