South Beach Phase 1.
1- Heat Olive Oil in a medium sized pot. Add diced onion, celery stalks, Canadian Bacon and Thyme. Saute until the veggies are translucent and bacon begins to crisp (NOTE: This wont get super crisp as is not a fatty as bacon).
2- Add clam juice, water, milk, clams (do not drain the juice use in soup) and zucchini. Let simmer 15-20 minutes until the zucchini becomes tender and the clams are cooked. Season with salt and pepper to taste.
