Healthy Firehouse Chili by EMT Mike Calise
1. Combine the diced tomatoes, chili beans, garlic and salt and pepper into a large pot. Simmer over medium heat, stir occasionally.
2. Dice up the vegetables and combine them into a pan. Sautee them over medium heat until they are tender. Add the can of tomato paste to the pan and stir in all the vegetables to get them to bind with the paste. Simmer on low for another 2 minutes then add the vegetable mixture to the pot.
3. Brown the ground turkey and add it to the pot.
4. Stir all the ingredients together and let simmer for 5 minutes
5. Plain Greek Yogurt on the side (as a substitute for sour cream) and shredded cheese
6. Enjoy
