A healthy and delicious alternative to traditional meatloaf.
Combine tomato paste and spaghetti sauce. Set aside.
Combine beef, carrots, garlic, cranberries, ground mustard, salt and pepper, bread crumbs and onion. Mix thoroughly. Add in 1/3 of tomato paste/spaghetti sauce mixture.
Form into a loaf and place in loaf pan (or small cake pan).
Top the loaf off with the rest of the tomato paste/spaghetti sauce mixture.
Bake at 375 degrees for 40 minutes.
Add cheeses to top. Bake for another 5 minutes.
Broil loaf for 2 minutes or until cheese starts to brown.
