HEALTHY MUGCAKE: 1 TBS coconut flour, 1 TBS almond flour, 1 egg white, 1/2 scoop protein powder, 1/2 tsp cocoa, 1 teaspoon stevia or another no cal sweetener, 1 tsp cacao nibs (optional), 1/2 tsp baking powder, 1/2 tsp vanilla extract, about 2 TBS applesauce, 1 T shredded low fat coconut shreds (optional), 1/4 cup almond coconut milk (add more if needed to reach a batter-like consistency). Blend. Pour. Cook for 2 minutes. Top with a little melted almond butter or sugar free chocolate chips.
