Suggest a better descriptionSeparate 3 Egg Whites from their yolk.
Mix the egg whites & teaspoon of pesto with a fork.
Whack the frying pan on a high heat, splash some chili oil in the base of the pan (I used rapeseed oil infused with chili).
After a few seconds evenly spread the diced chorizo in the pan.
When the mixture solidifies flip the omlette & leave on the heat for a minute.
Immediately serve with the rocket & possibly chopped baby tomatoes.
