This is a leaner option to regular burgers, meatloaf, and meatballs. Loaded with veggies its a great healthy meal.
Combine all ingredients in a large bowl.
Mix thoroughly.
Shape into loaf, balls, or patties.
Loaf:
Preheat oven to 350 degrees,
Place mixture into a 9"x13" baking pan sprayed with cooking spray.
Bake 45 to 50 minutes or until internal temperature reaches 165 with a meat thermometer.
Balls:
Preheat oven to 350 degrees.
Form mixture in 30 meatballs. Place about an inch apart on baking sheet lined with foil and sprayed with cooking spray.
Bake 25 to 35 minutes or until internal temperature reaches 165 with a meat thermometer.
Turn balls once during baking process.
Burgers:
Form into 8 patties.
Broil, bake or grill as desired.
You can use fresh spinach instead of frozen if desired. If using fresh, microwave 7 ounces for 3 minutes then pat dry. Let spinach cool a bit before adding to meat mixture.
You can also substitute 1/2 cup finely chopped green or red bell pepper for the spinach if desired.
