Delicious vegetarian dish that's low in fat.
Cook macaroni. Microwave sweet potato until very soft. Heat 1 tsp oil over medium heat and saute red onions, bell peppers, garlic, and green onions about 4 minutes until soften. Peel sweet potato and puree in blender or mixer. Preheat boiler. Drain mararoni and return to pan. Add veggie mixture, cottage cheese, sweet potato, tomatoes, seasonings, and 3 TBS cheese. Mix well. Heat over low heat until heated through. Transfer mixture to shallow baking dish, sprinkle with bread crumbs and remaining cheese. Broil 4 inches from heat until browned, about 3-5 minutes. Option to prepare in advance, store in fridge, microwave until hot, then brown under broiler.
