A hearty and sustaining chili perfect for and game day or chilly night (no pun intended!). This chili can be made on the stovetop or in a slow cooker.
1. Heat chili pot over medium-high heat. Add ground chuck, chopped onion, salt and pepper to pot. Cook until meat is brown and onions soft, crumbling meat while cooking.
2. Deglaze pot with beer and stir.
3. Turn heat up to high. Add cayenne pepper, oregano, chili poweder and cumin. Stir. Add tomatoe sauce and chili beans (I prefer hot but mild is perfectly fine). Salt and pepper to taste. Bring to a boil then reduce heat to low. Simmer for 2 hours. Chili is ready to eat once boiling but only gets better the longer it cooks.
(If wanting to make in slow cooker: brown meat and onion, put in slow cooker with rest of ingredients. Cook on low for 8 hours, or on high for 3-4).
The heat level of the beans really has an affect on the overall heat level of the chili. The chili only gets better with time. Add some easy-melting cheese to leftovers for a delicious chili cheese dip.
