Yummy Salad
1. In 1-quart saucepan, heat water, quinoa and 1/4 teaspoon of the salt to boiling; reduce heat. Cover; simmer 15 min. Remove from heat; let stand to cool slightly.
2.In food processor, place basil,cheese, lemon juice, oil, garlic, pepper, and remaining 1/4 teaspoon salt. Cover, process until nearly smooth, stopping to scrap down side when needed.
3. Drain any remaining liquid from quinoa. In medium bowl, toss quinoa, beans, tomato, and onions. Add basil mixture; stir to coat
4. To serve, place 2/3 cup lettuce on each of 6 plates; top with 3/4 cup quinoa mixture
