Full-blooded Italians love this sauce!
1. Brown Italian sausage.
2. Sauté onion and garlic clove in oil or sausage drippings until onion is soft. Crush garlic with a fork.
3. Add carrot, green pepper, bay leaf, and herbs. Stir well, then add the tomatoes, tomato paste, wine and seasonings. Simmer 15 minutes. Remove the bay leaf.
Use vegetable broth to thin for spaghetti sauce, or use "as is" for pizza.
This gets better over time, keeps in the refrigerator for a week, and freezes well.
Serve with Angel Hair pasta and garlic toast that YOU MAKE; not the nasty, pre-made stuff!
