This beefy hearty stew perfect for a cold day with a mealy warm satisfying healthy soup.
In a large skillet add garlic, onion, bell-pepper to already heated 1/2 of olive oil. Add cal-do de Rez. Sauté for 5 min.
In large pot bring half of olive oil to full heat add cubed mock steak brown for 10 min.
Add to pot he remaining ingredients except ( Mexican squash and cilantro) bring to a boil reduce heat to slow and cook for about 3-4 hours.
Salt to taste.
When the meat is tender to your liking approx. after 3 1/2 hours add Mexican Squash cook for and additional 20 min then add cilantro cook for 5 more min. Enjoy with a small amount of plain rice or alone as a soup.
Must be cooked in a very very large pot. Or can be placed in two large crock pot or two large pot split ingredients evenly.
