Wash potatoes and wrap in foil. Bake at 400 degrees for approximately 1 hour.
Place fillets in a single layer on a well-greased baking dish. Brush fish with lemon juice.
Combine parmesan, butter, mayo and onion. Broil fillets about 4" from heat source for 4-6 minutes
or until fish flakes easily when tested with a dork. Remove from heat and spread cheese mixture
on fillets. Broil 2- minutes or until lightly browned.
Melt butter in large skillet and saute zucchini and onion until tender. Season with Italian
seasoning, salt and pepper to taste.
Offer sour cream and butter when serving baked potatoes.
