From scratch Mayonaise recipe, with option for garlic
-combine first 5 ingredients in a food processor or blender.
-blend ingredients until egg is well beaten
-with blender running, add 1/4 cup of the olive oil, then add another 1/2 cup very slowly.
-add lemon juice and vinegar, also while blender is running.
-add rest of olive oil, slowly, while blender is running.
Your mayo should be thick and jiggly :-)
Lemon juice is probably the most important ingredient in this recipe. Adding the olive oil slowly with the blender running is the most important technique to adhere to!
