For use as a fondue, or for filling chocolate shells
Bring 300ml water to a simmer with the sugar and cucumber, then pour into a blender and puree. Pass through a fine sieve and place back into the saucepan. Add the gin and heat gently until warm enough to melt the chocolate, but do not allow to simmer. Pour on to the chocolate in a bowl and blend well. Add the rose oil and mix again.
