Herb-crusted leg of pork (bone-removed)
Heat oven to 175 degrees celsius (gas 4).
Brush surface of pork with oil.
Combine paprika, sage, rosemary, garlic, pepper and salt.
Rub herb mixture over surface of pork.
Place on rack in a shallow roasting pan.
Roast for between 1 and 1.5 hours or until meat thermometer inserted in thickest part reads 65 degrees celsius (about 25 minutes per 500g).
Remove from oven and cover.
Let rest for 20 minutes before slicing.
