Hern and Macadamia crusted rack of lamb
Preheat oven to 400 degrees.
Place macadamia, nuts, mustard, and garlic into blender, blend until smooth, season with salt and pepper.
Wash and dry rack, and pat dry. Heat pan with Ghee, and sear fatty side of rack, than other side. Cooks for 2 minutes or lightly brown both sides. Let set until room temperature. Cover racks with blended paste/ herbs, and bake for 15 to 18 minutes for medium rare. Remove from oven, let rest for 10 minutes, serve.
