Recipe for herb frittatas
1) a. Preheat oven to 350ºF.
b. Coat a 12-cup nonstick muffin tin with cooking spray.
2) a. In a large bowl, whisk eggs with salt and pepper until blended.
3) a. Warm oil in a small skillet over medium-high heat.
b. Sauté onion until softened but not browned, 3-5minutes.
c. Add garlic and sauté 1 minute longer.
d. Remove from heat and cool slightly.
4) a. Whisk onion mixture and herbs into eggs.
b. Divide among the 12 muffin cups and bake until set in center, 25-30 minutes.
5) For Spinach and Feta. Use 10 eggs. Thaw a 10-oz. box of frozen chopped spinach; squeeze dry, add to sauteed onion. Whisk into beaten eggs. Crumble 1/2 cup feta into the cups. Pour egg mixture over; bake as directed.
