Quick and delicious smashed potato recipe...
1.Preheat oven to 450
2.Line a rimmed baking sheet with foil and brush on 1 tbsp. olive oil
3.Heat a large pot 1/2 filled with water to a boil
4.Carefully add in new potatoes
5.Let potatoes cook on medium heat until they are fork tender
6.Drain potatoes
7.Place potatoes on lined baking sheet
8.Using a potato masher, or a fork, gently smash each potato trying to keep them together as you smash them
9.Drizzle remaining olive oil over them
10.Sprinkle with salt, pepper and 1 tsp thyme
11.Bake in oven for 25-30 minutes or until edges are crispy and browned
12.Sprinkle with remaining thyme and serve
13.ENJOY!!
