My traditional Christmas popovers +
Preheat oven to 400 degrees f.
Brush 18 wells of popover tins with the fat (or whatever lubricant you use on the tins).
Combine the eggs, flour, salt. thyme, rosemary and pepper until well combined. Warm the milk to approximately 110 degrees then gradually add the milk and cream until smooth and well combined.
Fill each tin with some of the batter.
Optional: Place a piece of the cheese in the center of each cup and add batter so that the cups are 1/2 to 2/3 filled.
Bake until puffed and golden 30 to 55 minutes depending on the size of your tins.
