Sautee bacon until crisp remove bacon add shallots cook until soft about 1 min. Deglaze pan with wine and apple juice, wisk in maple suryp mustard and lemon juice, blend in butter and flour, bring to simmer
Brown turkey on both sides then bake at 375 for about 20 - 30 mins until internal temp is 160.
Slice and drizzle with sauce and bacon andchives
