This is a great way to use up left overs and the kids love it.
In large skillet heat oil, add diced up left over meat. I used roast beef. Add onion salt and pepper. Add left over baked potatoes or bake some in the microwave, peel and toss in. You can break them up as they brown, no need to chop them. Add chili pepper. Once potatoes start to brown add corn, cook another 5 minutes. Add mayo, mix well toss in cheese. Add some rolls and you have a hearty meal in no time.
