Hoisin sauce typically has sugar in it. Most variations I found included peanut butter. I wanted to find a recipe that would work with my way of eating - which doesn't include sugar, peanut butter, oil, etc. The recipe is the one I found, but I have noted my changes to reduce the fat and calories. I did not thicken mine as I was planning to use it in another recipe that included adding water to final sauce - which I omitted as this sauce is runny.
Mix all of the ingredients EXCEPT for the white miso in a pot. Simmer over medium-low for about a minute. Reduce to low and add miso. Continue to simmer. I let it simmer for about 30 minutes in an effort to reduce it, but that didn't really work.
The original recipe called for a cornstarch slurry to thicken the sauce. Use one tablespoon cornstarch mixed with one tablespoon cold water (aka a cornstarch slurry) for each cup of medium-thick sauce. thoroughly mix the cornstarch and water together, then pour into your sauce. Cook and stir over medium heat until thickened and bubbly. Alternatives to cornstarch include Xantham Gum, Guargum, or even cassava flour.
I was planning to use the hoisin sauce in a Panda Express Beijing Beef copycat recipe. Instead of adding water to the final sauce in that recipe, I just use the more runny hoisin sauce.
I thought this turned out pretty good, but I don't actually know what hoisin sauce tastes like! The Chinese Five Spice gives it a subtle warming taste. I plan to buy some hoisin for comparison - and may tweak the recipe after that.
