Suggest a better descriptionin double boiler with water boiling (water should not touch the bottom of the pan):
combine 1 of the thirds of butter and egg yolks; cook stirring rapidly until butter melts.
add 1/3 more of the butter; stirring rapidly
as butter melts and sauce begins to thicken; add final 1/3 of butter; stirring constantly
When butter is melted, remove pan from water; continue stirring for 2 more minutes;
Stir in lemon juice, 1 teaspoon at a time;
stir in salt and pepper
heat again over boiling water, stirring constantly for 2 or 3 minutes or until thickened.
Yields 1 cup sauce
