Suggest a better description1. In a medium saucepan, cook the apple, celery & onion in hot oil over medium heat for 6 to 8 minutes or until the mixture is tender. Remove the saucepan from the heat & let it cool to room temperature.
2. In a large bowl, combine the apple mixture, ketchup, Jamaican jerk seasoning, salt & black pepper. Add the bison (or lean ground beef) & mix well.
3. Shape the meat mixture into six 3/4 inch thick patties.
4. For a Charcoal Grill: Grill the patties on a well-oiled grill rack of an uncovered grill directly over medium coals for 14 to 18 minutes, or until the patties are no longer pink (160ºF), turning them once halfway through the grilling process.
5. (For a Gas Grill: Preheat the grill. Reduce the heat to medium. Place the patties on a well-oiled rack over the heat. Cover & grill as directed above.)
6. Place the toast on a hot grill during the last 2 to 3 minutes of the grilling time, or until they are lightly browned & toasted on both sides.
7. Brush the slices on both sides with the melted butter. Place the slices on 6 dinner plates. Top with leaf lettuce, burgers & some of the Cantaloupe & Strawberry Relish.
Cantaloupe & Strawberry Relish:
1. In a medium bowl, combine the chopped cantaloupe, chopped fresh strawberries, finely chopped red onion, finely chopped green sweet pepper, snipped fresh cilantro, snipped fresh mint, finely shredded lemon or lime peel & the lemon or lime juice.
2. Toss the mixture lightly to coat the fruits & vegetables.
3. Let the relish stand at room temperature for 30 minutes, stirring occasionally.
4. (Or, cover & store in the refrigerator anywhere from 4 to 24 hours. Before serving, let the relish stand at room temperature for about 30 minutes.)
Makes about 2 cups of relish
