Family and friends request these from scratch made rolls for special occasions. This recipe makes two 9 by 1-1/2 inch round cake pans worth.
Dough:
Mix 2 Cups of flour and yeast. Heat milk, sugar, shortening, and salt just until warm and shortening is almost melted, stir constantly. Add to flour mixture, add eggs.
Beat at low speed for 1/2 minute. Beat 3 minutes at high speed. Stir in as much of the remaining flour as you can mix with a spoon.
Kneed in enough of the remaining flour to make a moderately stiff dough. Knead until smooth (6 to 8 minutes). Shape into a ball. Place in greased bowl, tun.
Cover and let rise until double (45-60 minutes). Punch down and divide in half.
Cover and let rest 10 minutes. Roll each half into a 12 by 8 inch rectangle.
NOTE: You can save time making the dough if you have a bread maker - Put warm milk, sugar shortening and salt mixture in to the bread maker. Add eggs, put in 4 cups of flour, make a hole in the flour and put yeast in the hole. Use the Dough only setting on your bread maker and you've saved some time.
Topping:
In EACH of the two 9 by 1 1/2 inch round baking pans, combine 1/3 cup brown sugar, 2 tablespoons butter, and 1 tablespoon of corn syrup. Cook and stir each pan over medium heat just until butter melts and ,mixture is blended. Sprinkle 1/4 cup of chopped pecans over each pan and set aside.
Inside:
In a small saucepan, melt 3 Tablespoons of butter. Brush each rectangle of dough with 1/2 of the melted butter.
Combine 1/2 cup sugar with 1 teaspoon ground cinnamon. Sprinkle half of the sugar mixture on each rectangle of dough.
Roll up, starting from long end (to make fewer, larger rolls roll from the short end).
Pinch dough together to seal firmly. Moistening the edge of the dough with water makes it easier to seal firmly.
Use a piece of thread to slice the dough into about 12 pieces. place the rolls in prepared pans.
Cover and let rise until double (about 30 minutes)
Bake in 375°F oven for 18-20 minutes. Cool rolls for about 30 seconds and invert onto a serving tray.
