Preheat oven: 300º F
In big bowl mix all dried ingredients except fruit. In saucepan/microwave, warm honey/oil for 45 sec. Add vanilla and mix thoroughly together.
Carefully pour the liquid mixture over the oat mixture. Stir thoroughly with wooden spoons. Spread granola into two 9 X 13 baking pans, so both pans are the same depth – This assures that they finish at the same time.
Bake about 40 minutes, stirring carefully every ten minutes or so. Cook until desired brown-ness. Put hot pans on racks or metal/granite surface and allow to cool. Stir in dried fruit, if desired. Place granola in airtight containers or zipper bags.
