Reserve a few chick peas for serving.
In a food processor, combine the remaining chick peas, lemon juice, cumin, tahini (if using) and water and blend to a creamy puree.
Season to taste with extra juice, garlic, cumin, or salt if required.
Pour into a serving bowl, drizzle with oil, and scatter with the reserved chick peas.
Sprinkle with paprika and serve with warm pitta bread.
