Homemade Pizza
Dissolve yeast in warm water. Stir in the rest of the dough ingredients. Beat well, about 20 strokes. Allow to rest 5 minutes. Using shoertening grease one 14"X10" jelly rollpan or 2 round 10" pizza pans. Use ample shortening. Pat dough into pans. While dough rises in a warm place, make the sauce. Blend all sauce ingredients in a blender on high about 30-60 seconds. Pour into saucepan and simmer 20-30 minutes. Spread sauce on dough. Sprinkle Parmesan cheese over. Put pepperoni or other toppings on sauce. Bake at 400 for 20 minutes for jelly roll pan, slightly less for round pans. Remove from oven. Cover pizza with shredded mozzarella cheese. Return to oven for 5 minutes. If possible, after cheese is put on, slide pizza off pans, onto rack in oven. This will give a crispy crust. Careful not to burn.
