Adapted from Gwenyth's Candy Bars, these bars have just enough ingredients to make them a great protein bar and plenty of ingredients to make them taste like a candy bar.
Process cashews in a food processor until a fine meal forms. Add the remaining ingredients, except the chocolate and coconut oil, and process until a well-blended dough ball forms.
Press evenly into a parchment-lined 8x12" pan. Melt the chocolate and coconut oil in a bowl set over simmering water. Spread evenly over the date and nut mixture then allow to set in the fridge for 2 hours or until firm.
Remove from the pan and cut into 20 equal bars. Store in the fridge or freezer.
Note: depending on the protein powder you use, you may want to reduce the maple syrup, and/or omit the vanilla extract. I used the Ancient Grains Quinoa, Rice, Amaranth, and Millet Protein Powder (Vanilla), and used the quantities listed above.
