Sweet, fresh sauce for spaghetti
Peel tomatoes (cut an X on the bottom, add to boiling water for 1 minute, immediately place in an ice bath) and place in a large pot on medium heat, add lid, let them steam/simmer. Cut onion, begin to carmelize, add balsamic vinegar, EVOO, sugar, seasonings. Cook until very done. Mash up the tomatoes, add the cooked onion. Cook hamburger meat, season, add to tomatoes. Will probably need to add tomato paste to thicken the sauce up. Salt, pepper, season, as cooking. Simmer to cook off some of the juices.
