The next day set oven at 170' or 140 if you can
Cook for 6 hours at this temp.
After 6 hours put the temp up to 185 for one hour or until the internal temp reaches 165.
After meat reaches 165 put into ice bath for 3 minutes
Put in fridge for 3-4 days or freeze
Vacuum Seal if you can.
