In a large bowl, whisk together oil, honey, soy sauce, and pepper. Place chicken and veggies in the bowl and marinate in the refrigerator overnight.
Heat grill; thread chicken and vegetables onto skewers. Cook for 12-15 minutes, until chicken juices run clear.
**Also can be prepared by placing all ingredients into a wok after marinating (including marinade), and stir frying.
**Also can be prepared in the oven. Set aside some of the marinade before putting the chicken and vegetables in. Heat to 325. Cook kabobs for 15 minutes, turn, baste, and cook for another 10 minutes. Turn, baste, turn oven up to 400 or low broil, cook for 2 minutes, turn, baste, and cook 2 more minutes.
