Chop chicken and vegetables into bite sized pieces.
In a large bowl, whisk together oil, honey, soy sauce, and pepper. Place chicken and veggies in the bowl and marinate in the refrigerator overnight.
Heat grill; thread chicken and vegetables onto skewers. Cook for 12-15 minutes, until chicken juices run clear.

Turn, baste, turn oven up to 400 or low broil, cook for 2 minutes, turn, baste, and cook 2 more minutes.
