Preheat oven to 350 F. On a plate, combine the flour, salt, and pepper. Dredge chicken in the flour mixture. In a small dish, combine the honey and mustard; set aside.
Heat the oil in a large nonstick skillet over medium high heat. Add the chicken and saute 2 minutes on each side. Remove the chicken from the skillet and place on a nonstick baking sheet. Pour the mustard mixture over the chicken and bake for about 10-15 minutes until it is no longer pink inside. Cover, if necessary, to keep sauce from burning during baking.
