great for snacks when you forget your lunch
Preheat oven to 350 degrees. In a very large bowl mix oats, nuts, brown sugar, cinnamon and salt with hands. Melt butter in a bowl, then add the honey and vanilla. Add butter mix to the oatmeal mix until all is well coated. Spread the granola onto parchment lined cookie sheets (2) Bake 10 minutes then take out of the oven and stir. Make sure you rotate the trays in the oven from the top to bottom shelf. Continue this process for 35-40 minutes until golden brown. After you have baked the granola mix add all the dried fruit and mix. The fruit becomes too chewy if you bake it with the mixture. Cool on the cookie sheets and then store in an airtight container or divide into snack size ziplock bags. Great for snacks or top with yogurt. I'm going to check the co-op for different dried fruits....
