Preheat oven to 300 degrees.
Mix oats, salt and cinnamon. In a separate bowl whisk the honey and coconut oil. Combine honey and oil mixture with the oat mixture.
Line 2 large baking sheets with foil. Spread the mixture across both sheets. Bake for 30 minutes, stirring after 15 minutes (switch oven racks too).
Let cool completely before storing. Ziplocks, freeze for longer preservation.
